Rinse lentils. Add to a pot with 1.5 cups of water per cup of peas. Bring to boil, then reduce heat, partially cover, and simmer for 30 to 45 minutes. Strain and serve.
Use in salads, soups, stews, casseroles, curries, dahl, and dips. Yellow split peas can also be used to make hummus and tortillas.
