Place one and a half cups of water for each cup of rice into a pan and bring to the boil. Add rice and simmer for 15 minutes, or until all the water is absorbed. Remove from heat and leave covered for 10 minutes.
Jasmine rice is an ideal accompaniment for fragrant curries such as Thai Green Curry. It's also great for making pilaf rice and fried rice. This lightly floral and slightly sweet rice pairs well with toasted coconut, coriander, cashew or turmeric.
