Soak overnight, then rinse. Place in pot with water and bring to the boil. Simmer for 1-1.5 hours, or until tender. Strain and serve.
Use in soups, casseroles, curries, stews, or bakes. Add to warm and cold salads, serve on toast in a tomato sauce, or simply top with herbs and butter.
